80% Unfermented Dark Chocolate

A typical, traditional and authentic Belizean chocolate.

Allspice and cinnamon take the lead, white ginger and vanilla round out this intense recipe. 

 

We met Anna and Mama Anna at their cacao orchard and family home in the Mayan Heartland of Belize, near to Lubaantum – a one of a kind sacred site.

 

Their farm called Akte’il Ha (Waterfall Hill) is very well named!  Gorgeous cacao orchards, untouched by the year's wildfires, unaffected by the drought that really hurt a lot of other farms, the Anna's and family produce incredible cacao that is NOT fermented!   They don't see the need. 

 

We present a Mayan Belizean recipe for spiced dark chocolate, using locally grown ingredients we purchased and imported direct from Anna’s neighbours.   They have a facebook page and a little cabana where you can stay overnight and enjoy the ambiance of the cacao orchards, calming waterfall and amazing cooking.

 

Allergen information:  Made in a facility that uses nuts. Vegan friendly.  No palm oil. May contain traces of gluten, soy, coconut.
