Heirloom cacao from the 16th Farm worldwide to be recognised under the HCP Heirloom Cacao Preservation program.   We met farmer Rex and some of his family many years ago at a chocolate festival overseas.  We got on well, loved the ethos and vowed to use the cacao one day.  A great year last year as his efforts were recognised finally by the HCP.
 
Mellow and chocolatey, biscuity and nutty, it works really well at 85%.  It's accessible - though far from sweet.
